Greenway Distillers, Inc. was founded in 2005. As Greenway Distillers we create Crispin’s Rose Liqueur, and Greenway Distillers Absinthe Superiure.

Crispin's Rose Liqueur brings together the time honored traditions of Cognac with a treasured family recipe. In Spring, while tending the roses, we let each variety speak to us, telling us by scent and taste when to harvest. We have explored the use of many roses, and settled on the varieties that compliment our apple eau-de-vie. The recipe is very old. We have brought it into the twenty-first century for you to enjoy with the one you love most. Our goal is to inspire you and to reawaken that portion of the palate lost in antiquity's wake; to marry apples, honey, roses, love, and sunshine in one glass.

Crispin was  motivated to make the best possible Absinthe with the best source of eau-de-vie I have found, honey and apples. We make wine from the honey and apples from an old family recipe, and then distill it on the antique  still. (This is the same stillroom I first came to work in with Hubert Germain-Robin, in 1989.)

The Still


If one is familiar with the story behind Germain-Robin Brandy, then you know some of this story. The still we are using is the same one that was used to make G-R. In 1981 Hubert Germain-Robin and Ansley Coale (President of the company that makes G-R), went to Cognac to buy this 1250 liter still that sat idle in a barn next door to the place where Hubert grew up. As a child he played in the barn with other kids. The pot itself is old enough that it had a hole in it from when the tax laws changed in the 1790's. You paid or they disabled your still. This one sat disabled for centuries.

The style of the still is called "Charetais" and this pot could have been made as early as 1650. The traditional double distillation process of Cognac has not changed for about five centuries. The only improvement has been gas burners. This has added more control than burning coal, peat, or oak.

At one time in Cognac France it was common for every farmer to have a still to distill the small lot he grew. The big Cognac houses would come each year and buy the best. By selecting from hundreds of different farms the Brandy Master achieves a consistent blend year after year that represents the region.

Greenway Distillers is a small farm of roses. We distill much like those small farmers did, for about two weeks out of the year.


Absinthe Superieure

Crispin macerates select herbs in the brandy: rose geranium, lemon balm, wormwood, hyssop, lemon verbena, star anise, fennel seed, mint, and lemon peel, among others. Then he carefully distills the brandy with the herbs.

Crispin's Rose Liqueur

Crispin starts by crafting a mead from honey which he then hand-distills with apple juice using the original Germain-Robin antique cognac still.  Next, he hand-picks rose petals, gathered early-morning when the air is soft & fresh and the roses are at their most fragrant. It takes a dozen roses to make just one bottle.
